Fiery Grilled Peach and Habanero Salsa

It has been a while since we have featured a delicious recipe and this week we’re bringing it back with a bang!  If you follow our Facebook page you may have seen us post a link to Cooking Light‘s recipe round up featuring peaches.  This weekend we got into the kitchen and tried 1 of their 16 wonderful recipes, Fiery Grilled Peach and Habanero Salsa.  That’s right, this dish is a great way to enjoy fruit in a new, savory way.  Not only is this salsa delicious, it’s easy to prepare, and includes simple ingredients too!

Fiery Grilled Peach and Habanero Salsa

Ingredients

  • 4 large peeled peaches, halved and pitted (about 1 pound)
  • 2 (1/4-inch-thick) slices red onion
  • Cooking spray
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sugar
  • 1 teaspoon grated orange rind
  • 1 teaspoon finely chopped seeded habanero pepper
  • 1/2 teaspoon salt

Preparation

  1. Prepare grill to medium-high heat.
  2. Lightly coat peaches and onion with cooking spray. You can also brush them with olive or canola oil like we did if that is all you have on hand.

 3.  Place peaches and onion on grill rack coated with cooking spray; grill peaches 2 minutes on each side.  Don’t be afraid to leave them on a bit longer. A bit of extra time on the grill will only intensify the gorgeous grill marks and bring out more intense peach flavors in the final dish.

       4. Cool and chop peaches. Grill onion 3 minutes on each side. Cool and chop onion.

         5. Combine peaches, onion, cilantro, and remaining ingredients in a medium bowl; toss well. Let stand 15 minutes. For more flavor, let the salsa                 sit in the fridge overnight. If habanero peppers are too spicy for you, simply use jalopenos or leave the peppers out all together.

This salsa is great simply on chips but there are endless ways to enjoy it in other dishes as well!

  • Make a salad of spinach, red pepper, fresh corn, black beans, feta cheese, topped off with a scoop or two of peach salsa and crushed tortilla chips.
  • Enjoy a quesadilla made from a whole wheat tortilla, cheese, shredded chicken, and peach salsa.
  • Add a pop of flavor to any grilled meat – chicken, tilapia, shrimp, and salmon would be particularly delicious.
  • Impress your friends and family at your next pot luck by bringing a side dish of brown rice, black beans, peach salsa, and feta cheese all mixed together and chilled in the fridge for 1-2 hours.
  • Use it to jazz up your next batch of fish tacos.
