Light & Easy Frozen Berry Graham Squares

Today we have a quick and easy summer recipe for you.  This dish can be easily modified to be a refreshing and light dessert for your next summer barbeque or a fun afternoon snack for your kids.  Either way you enjoy it you’ll only need 5 easy ingredients that you can keep on hand at any time!

Ingredients

  • 1 sleeve of Graham crackers
  • 1 stick unsalted butter
  • 1.5 cups of chopped fruit (we used blueberries)
  • 2 cups low-fat strawberry yogurt
  • 1 container light whipped topping

Before starting on the crust take the whipped topping out of the freezer to thaw out.  Great, now let’s get started by assembling the graham cracker crust.  Use a food processor to crush all of the graham crackers in to crumbs.  Once your crumbs are ready, melt the stick of butter and pour it over them.

Stir to distribute evenly and pour the mixture into your pan.  We used a large baking dish but you could also use a pie pan or even muffin tins.  Once the buttered crumbs are in the pan press the crust into the bottom of the dish using a piece of saran wrap to keep your hand clean.

Bake the crust in a 375 F oven for 7 minutes (baking time will be shorter for a smaller pan or muffin tins).  If you would like to save some time, a pre-made graham cracker crust in a pie tin would work too.

While the crust is in the oven prepare the filling by stirring together the yogurt and the whipped topping in a large bowl.  Cover the filling and set it in the refrigerator while you wait for the crust to finish baking and cool to room temperature.  Once the crust is cool, spread the filling in an even layer and top with blueberries.

Freeze the entire pan for 1-2 hours to set before serving.

You can prepare this dish in advance and keep it frozen until you’re ready to serve it.  We would recommend removing it from the freezer up to 2 hours ahead of time to allow the dish to thaw.  Once the dish has thawed, simply slice and enjoy!

If you would like to use this recipe as a fun afternoon snack for your children simply use the yogurt topping as a filling between two graham cracker squares.  Freeze the sandwiches for a delicious and healthy alternative to ice cream sandwiches!

 You can even get your kids into the kitchen to help you assemble them.

This recipe can be easily customized to create any flavor combination you would like.  The crust could be made from graham crackers, Nilla wafers or chocolate wafers.  You could also use any flavor of yogurt you would like with fruit, nuts or chocolate toppings.  There are hundreds of delicious possibilities!   What flavor combinations do you want to try first?
