Family Friendly Sangria Popsicles

June 29th, 2015

Who else is dying in this Utah heat wave? I love the summer and all the outdoor possibilities, but really, how fun is a good hike or just being outside when it’s 100 degrees? I created this recipe a couple months ago for a Welch’s recipe contest & still think it’s one of the most perfect ways to cool down after being outside or while sweating inside. I mean cold or room temp water is only so good after so many gulps. So, homemade popsicles are a great way to cool down, hydrate, and still maintain control of what goes into your mouth! That’s because you can make your popsicles with whole fruit or juice, which have far more nutrients than the traditional store bought popsicles. Plus you can omit any added sugar and just enjoy the tangy fruit. Again, winning? The answer is yes, a refreshing delicious yes! Oh + they’re really easy- just assemble & freeze & enjoy a few short hours later.

I will warn you, these popsicles are super gingery, and they got even more gingery post freezing. So if you don’t totally fall for overwhelming ginger flavor, start on the lower end or simply omit the ginger.

So, without further ado, let’s travel to Spain to enjoy these frozen treats that are equally as beautiful as the original, but family friendly without the usual booze.

Ingredients

  1. 1 cup 100% original grape juice
  2. 2 cups lime flavored sparkling water
  3. 1/2- 1 1/2 teaspoons grated ginger (depending on how gingery you want it)
  4. 1 whole grapefruit, sliced
  5. 1 whole lime, sliced
Instructions
  1. Pour grape juice into bowl.
  2. Stir in citrus slices and ginger and sparkling water.
  3. Pour into popsicle molds.
  4. Freeze until solid, 3-4+ hours.
Notes
  1. I blended my grape juice and grated ginger so the ginger wasn’t chunky. Ginger flavor does become stronger as it sits.
  2. You can also just drink this as a fruity beverage! To keep beverage sparkling, add sparkling water right before serving.
