Cheese Enchiladas <\/strong>(Recipe from Campbellskitchen.com)<\/p>\n<p><em>Looking for a creative way to use leftover chicken?\u00a0 These kicked-up, easy-to-prepare enchiladas come out of the oven hot and bubbly for a\u00a0flavorful\u00a0dish the whole family will love.<\/em><\/p>\n<p>Prep:\u00a0\u00a0\u00a0 15 minutes<a href=\"http:\/\/www.campbellskitchen.com\/recipes\/easy-chicken-cheese-enchiladas-50780?fm=internal_search\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-841\" title=\"Easy chicken enchiladas pic\" src=\"http:\/\/eatrightutah.org\/wordpress\/wp-content\/uploads\/2013\/12\/Easy-chicken-enchiladas-pic.bmp\" alt=\"\" width=\"225\" height=\"156\" \/><\/a><br \/>\nBake:\u00a0\u00a0 40 minutes<br \/>\nServings:\u00a0 6<\/p>\n<p>1 can (10 \u00be oz) Campbell&#8217;s\u00ae Condensed Cream of Chicken Soup (Regular <strong>or<\/strong> 98% Fat Free)<br \/>\n1\/2 cup sour cream<br \/>\n1 cup Pace\u00ae Picante Sauce<br \/>\n2 teaspoons chili powder<br \/>\n2 cups chopped cooked chicken<br \/>\n1\/2 cup shredded Monterey Jack cheese (about 2 ounces)<br \/>\n6 flour tortillas (6-inch), warmed<br \/>\n1 small tomato, chopped (about 1\/2 cup)<br \/>\n1 green onion, sliced (about 2 tablespoons)<\/p>\n<ol start=\"1\">\n<li>Heat the oven to 350\u00b0F.\u00a0Stir the soup, sour cream, picante sauce and chili powder in a medium\u00a0bowl.<\/li>\n<li>Stir <strong>1 cup<\/strong> soup mixture, chicken and cheese in a large bowl.<\/li>\n<li>Divide the chicken mixture among the tortillas.\u00a0Roll up the tortillas and place seam-side up\u00a0in a 2-quart shallow baking dish.\u00a0Pour the remaining soup mixture over the filled tortillas.\u00a0Cover the baking dish.<\/li>\n<li>Bake for 40 minutes or until the enchiladas are hot and bubbling.
