Their names will appear in the September issue of the Journal of the Academy of Nutrition and Dietetics. Elyce is a student at Brigham Young University majoring in Dietetics. Elyce puts what she learns into practice as a dietary tech and as a nutrition consultant for BYU\u2019s Women\u2019s Services. She \u201cstands out in her passion and actions to improve the nutrition health of others, in particular women.\u201d<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-very-dark-gray-color\">Elyce\u2019s commitment to improving the health of others is also demonstrated in her volunteer work in Honduras providing health and nutrition education in Spanish to over 200 individuals.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-very-dark-gray-color\">The list of Elyce\u2019s accomplishments is extensive. In addition to excelling academically, she\u2019s been a member of the BYU\u2019s Student Association, served as an anatomy teaching assistant, and is a member of multiple honor societies.<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-very-dark-gray-color\">We have no doubt that Elyce will excel in whatever she pursues.<\/span><\/p>\n\n\n\n<p><strong><span class=\"has-inline-color has-very-dark-gray-color\">Coordinated Program: Kennedy Springer<\/span><\/strong><\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.eatrightutah.org\/wordpress\/wp-content\/uploads\/2020\/08\/Kennedy-Springer-668x1024.jpeg\" alt=\"\" class=\"wp-image-2782\" width=\"174\" height=\"267\" srcset=\"https:\/\/www.eatrightutah.org\/wordpress\/wp-content\/uploads\/2020\/08\/Kennedy-Springer-668x1024.jpeg 668w, https:\/\/www.eatrightutah.org\/wordpress\/wp-content\/uploads\/2020\/08\/Kennedy-Springer-196x300.jpeg 196w, https:\/\/www.eatrightutah.org\/wordpress\/wp-content\/uploads\/2020\/08\/Kennedy-Springer-768x1178.jpeg 768w, https:\/\/www.eatrightutah.org\/wordpress\/wp-content\/uploads\/2020\/08\/Kennedy-Springer-640x981.jpeg 640w, https:\/\/www.eatrightutah.org\/wordpress\/wp-content\/uploads\/2020\/08\/Kennedy-Springer.jpeg 836w\" sizes=\"auto, (max-width: 174px) 100vw, 174px\" \/><\/figure><\/div>\n\n\n\n<p><span class=\"has-inline-color has-very-dark-gray-color\">The outstanding student from a Coordinated Program is Kennedy Springer.&nbsp;Kennedy is a second year student in the Coordinated Master\u2019s Program in Nutrition and Dietetics at the University of Utah. Professors&nbsp;note \u201cher strong communication skills and tremendous work ethic\u2026in addition to a high level of maturity and professionalism.\u201d<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-very-dark-gray-color\">Kennedy balances a 4.0 GPA in graduate school with teaching assistant responsibilities, coaching volleyball, and a master\u2019s thesis project conducted with Huntsman Cancer Institute entitled: \u201cMetabolomic Profiles of Inflammatory and Insulinemic Dietary patterns and Endometrial Cancer.\u201d<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-very-dark-gray-color\">In addition to her impressive academic skills, she contributes to the community through various volunteer efforts including roles at St. Vincent De Paul Dining Hall, University of Utah Center of Community Nutrition, Wasatch Community Gardens, and the Rural Health Scholars organization.<\/span>&nbsp;<\/p>\n\n\n\n<p><span class=\"has-inline-color has-very-dark-gray-color\">Kennedy will pursue her dietetics career at the University of Washington in the Sports Nutrition Department where she has been selected as a CPSDA Gatorade SNIP fellow.&nbsp;<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-very-dark-gray-color\">Kennedy is the epitome of a high-achieving student and a leader in the health sciences. Mckenna is completing her Internship through Brigham Young University. She is \u201cpleasant, highly motivated, and autonomous\u2026has a desire to learn and is open to all experiences in the internship even whey they may be difficult.\u201d<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-very-dark-gray-color\">She has been a teaching assistant for a number of courses. She is trusted for her judgment and follow-through on tasks.
