href=\"http:\/\/www.huffingtonpost.com\/\">Huffington Post<\/a> recently featured this <a href=\"http:\/\/www.huffingtonpost.com\/2011\/10\/27\/asparagus-and-tomato-sala_n_1061285.html\">Asparagus and Tomato Salad with Feta<\/a> recipe and we wanted to try it out to show everyone how simple and delicious it is. \u00a0We made two modifications to the recipe substituting rice wine vinegar in for champagne vinegar and using whole grain artisan bread instead of country white bread.<\/p>\n<p><strong>Asparagus and Tomato Salad with Feta<\/strong><\/p>\n<p>Recipe adapted from <em><a href=\"http:\/\/www.amazon.com\/gp\/product\/0376020601\/ref=as_li_tf_tl?ie=UTF8&amp;tag=a0382e-20&amp;linkCode=as2&amp;camp=217145&amp;creative=399373&amp;creativeASIN=0376020601\">Time to Grill<\/a><\/em>\u00a0featured on the <a href=\"http:\/\/www.huffingtonpost.com\/\">Huffington Post\u00a0<\/a><\/p>\n<p>Serves: 4<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>1 1\/2 pounds asparagus<\/li>\n<li>1 pint cherry tomatoes<\/li>\n<li>3 slices whole grain artisan bread<\/li>\n<li>1\/2 cup crumbled feta cheese<\/li>\n<li>chopped fresh chives<\/li>\n<\/ul>\n<p>Vinaigrette Dressing:<\/p>\n<ul>\n<li>1 tablespoon Dijon mustard<\/li>\n<li>2 tablespoons rice wine vinegar<\/li>\n<li>1\/4 teaspoon kosher salt<\/li>\n<li>1\/8 teaspoon ground black pepper<\/li>\n<li>1\/2 cup extra-virgin olive oil<\/li>\n<\/ul>\n<p>We started by gathering all of the necessary ingredients for easy access while cooking.<\/p>\n<div class=\"mceTemp mceIEcenter\">\n<dl id=\"attachment_224\" grill to cook the asparagus over medium heat and turn on your broiler to high. \u00a0In a small bowl whisk the mustard, vinegar, salt, and pepper. \u00a0Slowly whisk in the olive oil until fully of the asparagus by holding it at both ends and gently bending until it snaps naturally. \u00a0This is usually two thirds of the way down the spear.<\/p>\n<p style=\"text-align: center;\"><a left;\">Spread the asparagus on a large plate or dish and drizzle with 2 tablespoons of the vinaigrette dressing and turn the spears until they are evenly coated. \u00a0In a medium bowl toss the tomatoes and bread cubes with 2 tablespoons of the vinaigrette and toss to coat. \u00a0Evenly spread the tomatoes and bread cubes on a baking dish and place underneath the broiler.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/eatrightutah.org\/wordpress\/wp-content\/uploads\/2012\/05\/UAND-tomatoes-and-bread.png\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter height=\"219\" \/><\/a><\/p>\n<p style=\"text-align: left;\">While keeping a close eye on the tomatoes and bread cubes, lay the asparagus on the grill over direct heat and replace the grill cover.
