Melanie posted this pumpkin chili last year, over the past year, I&#8217;ve talked to my mom &#038; my grandma about it on many occasions. I&#8217;ve made it myself a few times and can vouch for them&#8230;.. it&#8217;s DELICIOUS! But to make it even better- it&#8217;s warm and can be thrown together in about 30 minutes. I can&#8217;t think of a better way to spend my evening than eating this delicious and hearty soup, especially as it starts to get colder (I hear the rumor on the street is that it&#8217;s supposed to snow on Wednesday in SLC). Anyways, enjoy- I know you will!<br \/>\n<a href=\"http:\/\/eatrightutah.org\/wordpress\/wp-content\/uploads\/2015\/10\/We-are-an-independent-PR-agency_-2-1024x768.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/eatrightutah.org\/wordpress\/wp-content\/uploads\/2015\/10\/We-are-an-independent-PR-agency_-2-1024x768-300x225.jpg\" alt=\"\" title=\"We-are-an-independent-PR-agency_-2-1024x768\" width=\"300\" height=\"225\" class=\"aligncenter size-medium wp-image-1471\" \/><\/a><br \/>\nPrep Time<br \/>\n15 min<\/p>\n<p>Cook Time<br \/>\n20 min<\/p>\n<p>Total Time<br \/>\n35 min<\/p>\n<p>Ingredients<br \/>\n-1 lb ground turkey or lean ground beef (or leave it out altogether for a vegetarian option)<br \/>\n-2 Tbs olive oil<br \/>\n-1 c onion (yellow or white), chopped<br \/>\n-1\/2 green bell pepper, chopped<br \/>\n-1\/2 yellow bell pepper, chopped<br \/>\n-2 minced garlic cloves<br \/>\n-1 can corn<br \/>\n-2 cans red kidney beans, drained and rinsed<br \/>\n-1 can black beans, drained and rinsed<br \/>\n-2 cans (14.5 oz) diced tomatoes<br \/>\n-1 can (14.5 oz) pumpkin puree<br \/>\n-1 can (6 oz) diced green chiles<br \/>\n-2 Tbs chili powder<br \/>\n-1\/2 Tbs cumin<br \/>\n-1\/2 Tbs red pepper<br \/>\n-1\/2 Tbs cayenne pepper<br \/>\n-Salt and pepper, to taste<br \/>\n-Water, to desired thickness of soup (I used two cans of water after pouring in the juices from the diced tomatoes)<\/p>\n<p>Instructions<br \/>\n-Brown the ground turkey\/beef in a pan<br \/>\n-In a separate pan, heat the oil and then sautee the onion, garlic, and chopped bell peppers for about 10 minutes<br \/>\n-After the turkey is browned, combine the turkey with the sauteed vegetables<br \/>\n-In a large pot, pour the diced tomatoes, kidney beans, black beans, corn, and pumpkin.<br \/>\n-Add the chili powder, cumin, and cayenne pepper<br \/>\n-Add the turkey and sauteed vegetables to the pot and mix all ingredients together<br \/>\n-Add water to the amount that make the chili the thickness you want<br \/>\n-Simmer chili in the pot on medium high heat for about 20 minutes<\/p>\n<p>Notes<br \/>\n-Serve with a dollop of plain Greek yogurt and cheese if you please!<br \/>\n-You can reduce the amounts of red and cayenne pepper depending on how spicy you like your chili.
